For the Citrus Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g granulated sugar
Ingredients for the Premix (makes 850ml, to serve 10)
400ml good quality vodka
100ml classic gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Place the listed items into a pot, bring to a gentle boil, stirring to dissolve. After that, remove from the burner allowing it to cool entirely. Pour into an sealable bottle, close it keeping it chilled, where it will keep for up to a month.
For the Cocktail Base: Combine the specified liquid ingredients into a large bottle, allow it to infuse for one hour, then pass it through preferably using cheesecloth, to ensure it's fully clarified.
To serve: Measure 85ml of your cocktail base into a cocktail shaker filled with ice, gently stirring gently for about 60 seconds until cold. Filter to a frosted cocktail glass or similar, decorate with some cranberries and finish by giving it a brief mist of mandarin oil over the drink.
